INGREDIENTS:
• 2 tsp olive oil|
• 1 garlic clove, minced
• 2 small shallots, finely chopped (approx. 1/4 cup)
• 1/2 C low sodium chicken broth or water
• 1/2 C roasted cashews, roughly chopped
• 1 lb green beans (approx. 6 C) blanched or slightly steamed. French cut
Warm the olive oil over medium heat in a non-stick pan. Add garlic and shallots and saute until they begin to caramelize slightly. Add chicken broth (or water) and continue to saute until tender and the broth is almost evaporated. Add cashews and saute for another minute, or until lightly browned. Add green beans. Cook, stirring frequently for 5 minutes or until beans are at desired consistency. Add more chicken broth if needed.
Per 1/2 serving: 30 calories, 2g fat, 2g fiber, 2g protein
