RECIPE: Mediterranean Stuffed Turkey Meatloaf

Serves 6

Preheat oven to 375°F.

Mix together following ingredients and pat into over-sized muffin tins, spreading a layer on the bottom and up to the sides to create a cavity. Set aside.

32 oz ground turkey
2 tsp cumin
2 tsp paprika
1/2 tsp liquid smoke (optional)
1 tsp crushed red chili flakes 
Salt and pepper

Saute following ingredients in 1 tsp extra virgin olive oil. Place inside turkey. Bake for 30 minutes in preheated oven.

1 large onion, diced
1 eggplant (1 1/4 lb), diced
2 C grape tomatoes
4 C fresh spinach
2 cloves garlic, minced
6 (30 g) sundried tomatoes (dried, not packed in oil)

Top each meatloaf with feta cheese and fresh parsley. Serve and enjoy!
