RECIPE: Mediterranean Stuffed Turkey Meatloaf

Serves 6

  • 32 oz ground turkey
  • 2 tsp cumin
  • 2 tsp paprika
  • 1/2 tsp liquid smoke (optional)
  • 1 tsp crushed red chili flakes 
  • Salt and pepper

Preheat oven to 375°F.

Mix together following ingredients and pat into over-sized muffin tins, spreading a layer on the bottom and up to the sides to create a cavity. Set aside.

Saute following ingredients in 1 tsp extra virgin olive oil.

  • 1 large onion, diced
  • 1 eggplant (1 1/4 lb), diced
  • 2 C grape tomatoes
  • 4 C fresh spinach
  • 2 cloves garlic, minced
  • 6 (30 g) sundried tomatoes (dried, not packed in oil)

Place inside the muffin tins. Bake for 30 minutes in preheated oven.

Top each meatloaf with feta cheese and fresh parsley. Serve and enjoy!
