Creative with Cauliflower

I don’t often (if ever) hear “I eat too many vegetables”. If we aren’t interested in what we are eating, we likely will choose not to include those items into our meal routine. Unfortunately, this most commonly impacts our vegetable intake.

Have you found yourself getting bored of the same old routine with vegetables or unsure what to do with that Costco sized bag of produce before it goes bad? If so, you are not alone.

Whether you are out of ideas or live with picky eaters below are ideas to boost your vegetable intake and get creative with cauliflower.

A general recommendation is to aim for 2-3 servings of vegetables at meals, more the merrier.One serving is equivalent to ½ cup raw or cooked.

Add to ground meat dishes

  • Taco filling/enchiladas
  • Stuff bell peppers
  • Meatloaf

Blend into soups, sauces, dips

  • Potato soup or mashed potatoes (replace or substitute)
  • Alfredo pasta sauce
  • Hummus

Mix into rice or casserole dishes

  • Stir fry

Premade items with cauliflower

When buying premade items with cauliflower, look for cauliflower as the first ingredient. These items are often are not a significant source of vegetables.

  • Pizza Crust
  • Gnocchi
  • Cauliflower tots
