For a slight variation on “Cowboy Caviar” this great dip uses a combination of fresh, frozen, and canned goods. Aim to seek out organic beans – believe it not, they are lower sodium content then the conventional “low sodium” varieties. This dip is high in fiber, Vitamin C, and potassium – all powerhouses for boosting the immune system. Use this tasty dip as a topper to jazz up grilled chicken breast, as a filling for vegetarian enchiladas, or cooked into an egg scramble. Enjoy!
Serves 6 (1/2 cup portion)
Ingredients
- 1 cup frozen corn, cooked
- 1 (14.5oz) can low sodium/organic black beans
- 1 (15oz) can diced tomatoes, drained
- 1 medium avocado, diced
- ¼ cup cilantro, chopped
- 1 lime, juiced
- ¼ tsp cumin
- ¼ tsp ground pepper
Directions
1.) Mix all ingredients together in a large bowl.
