RECIPE: Asian Noodle Salad


• 2, 8 oz bags of tofu noodles (e.g. Shirataki noodles) rinsed and drained.
• 2 blocks high protein, light tofu (e.g. Azumaya brand Light Extra firm), chopped slightly grilled, and chilled. 
• 2 bell peppers, thinly sliced
• 2 cups shredded carrots
• 2 cups shredded cabbage
• 1/4 cup fresh cilantro, minced
• 1/2 cup Trader Joe’s brand Spicy Peanut Vinaigrette
• 2 tbsp. finely chopped peanuts

Place all ingredients in large bowl and toss to evenly coat with vinaigrette. Divide into 4 servings and enjoy.
