1.5 pounds boneless, skinless chicken breasts but into 1” cubes
2 tablespoons peanut oil
2 teaspoons chili powered
2 cloves minced garlic
2 tablespoons Sriracha hot chili sauce
2 cups broccoli florets
2 cups thinly sliced carrots
Sprinkle half of the chili powder on the chicken
Heat the oil in a wok or large sauté pan over medium heat. Sauté the garlic and the remaining chili powder for 60 seconds, or until the garlic starts to turn brown
Add the broccoli and carrots. Stir gently for 2-3 minutes
Add the chicken and Sriracha chili sauce
Continue stirring for 5-6 minutes, or until the chicken is thoroughly cooked.
